2 (14 1/2 oz) cans chicken broth
1 cup water
1 medium carrot, sliced
1 stalk celery, chopped
1 cup chopped fresh mushrooms
3/4 cup long-grain rice
1 tsp dried basil, crushed
1/8-1/4 tsp pepper
2 cups chopped, cooked chicken
2 tbsp chopped parsley

In a large saucepan, combine the first 5 ingredients. Bring to a boil. Reduce heat. Stir in uncooked rice, basil, and pepper. Cover; simmer soup for 15 minutes or until rice is tender. Stir in chicken and heat through. Stir in parsley. Serves 4
