WHITE CHOCOLATE CHUNK COOKIES

3/4 cup each packed brown sugar and granulated sugar
1 cup shortening
3 eggs
1 tsp vanilla extract
2 1/2 cups flour
1 tsp each baking powder and baking soda
1/2 tsp salt
1 cup coconut
1/2 cup each rolled oats and chopped walnuts
12 oz white chocolate baking bar, cut into 1/4 to 1/2 inch chunks

Preheat oven to 350. Combine both sugars and shortening until light and fluffy. Add eggs, one at a time, beating after each addition. Add vanilla and blend well. Add dry ingredients and mix well. Stir in the remaining ingredients and drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheets. Bake for 10-15 minutes or until light golden brown. Cool 1 minute before removing from cookie sheet.
