SPINACH SALAD

1 bunch spinach, washed and patted dry (about 3/4lbs)
1/2 cup slivered mild red onion
1/2 cup pitted olives, preferably Kalamata
Crumbled feta cheese (optional)
1 tbsp wine vinegar
1/4 tsp dried oregano
1 small clove garlic, minced
1/8 tsp salt
3 tbsp olive oil
Coarsely ground black pepper
Remove and discard stems from spinach; you should have about 8 cups leaves. Place in salad bowl; add onion, olives and (if used) feta cheese.
In a small bowl, combine vinegar, oregano, garlic and salt.
In a small pan, swirl olive oil over medium heat until it is hot but not smoking, 2 to 3 minutes. Using a whisk or fork, gradually beat oil into vinegar mixture. Quickly add dressing to the salad, tossing lightly. Serve at once, offering freshly ground pepper to taste. Serves 4
