SOFT AND CHEWY PEANUT BUTTER COOKIES

2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 1/4 cups firmly packed brown sugar
1 1/4 cups sugar
1 cup butter or margarine, softened
3 large eggs
1 cup creamy peanut butter
2 tsp vanilla extract

Preheat oven to 300. In a medium bowl, whisk together the flour, soda, and salt; set aside.

In a large mixing bowl, cream sugars and butter with an electric mixer at medium speed until light and fluffy. Add eggs, peanut butter and vanilla and mix at medium speed until well blended. Stir in the flour mixture and until just mixed.

Drop by rounded tbspfuls onto an ungreased cookie sheet. With a wet fork gently press cookies in a crisscross pattern. Bake for 18 to 22 minutes or until slightly brown along edges. Makes 3 1/2 dozen.
