PEACH COBBLER I

2 prepared pie crusts

Filling
1/2 cup unsalted butter
4 lbs fresh or frozen peaches, peeled, pitted and sliced
4 cups sugar
4 tbsp flour
1/2 tsp cinnamon and nutmeg
1 tsp vanilla
12 scoops vanilla ice cream

Preheat oven to 350. Prepare filling: Melt butter in a saucepan. Add peaches and mix well. In a small bowl, combine sugar and next 3 ingredients. Add the peaches and mix well. Reduce heat to low and simmer until 8-10 minutes. Remove from heat and cool completely. Stir in vanilla and set aside.

On a floured surface, roll out each crust into a rectangle, 12x10 inch. Using a knife, cut the dough to fit the pan, reserving excess trim. Place the dough in an 11 x 9 inch pan and press down to mold. Pour half the filling over the crust. Cut reserved dough into nickel-size pieces and dough filling with dough.

Pour remaining filling over the dough pieces and repeat the layering. Pinch the edges to seal in the juices. Make 3 slits in the top crust and place in oven. Bake for 30-40 minutes or until golden brown.

Remove from oven and rest for 10 minutes before serving. Spoon cobbler into individual cups and serve with ice cream.
