SHRIMP SALAD II

1 lg large (21-25 count) frozen shrimp peeled and deveined, thawed at room temperature
2 tbsp mayonnaise and sour cream
1 tbsp finely minced fresh tarragon
1 tsp lemon juice and tarragon vinegar
1/4 cup finely diced celery and minced sdcallions
1 tsp kosher salt
1/2 tsp ground white pepper

In a small bowl, mix mayonnaise, sour cream and tarragon. Set aside. In a medium bowl, toss shrimp, lemon juice and vinegar. Stir in celery and scallions. Add mayonnaise mixture, salt and pepper, toss to coat. Cover and refrigerate until ready to serve. Taste to correct seasoning. Serves 4
