PECAN TARTS

Crust
1 small pkg cream cheese
1/2 cup butter
1 cup flour, sifted

Filling
1/2 cup butter
1 cup sugar
2 eggs, separated
1 tsp vanilla
1 cup chopped pecans

Crust: Cream together cheese and butter. Add flour and mix well. Chill at least 1 hour or longer. Divide into 24 parts. Shape into balls. Press each into mini muffin pans, forming a crust. Leave no holes.

Filling: Cream butter with sugar and egg yolks. Add vanilla and chopped nuts. Fold in beaten egg whites and pour into uncooked pastry shells. Bake at 350 for 20 minutes or until brown. Makes 3-4 dozen
