PARMESAN AND BASIL CHICKEN SALAD

2 whole chicken breasts
Salt and pepper, to taste
1 cup mayonnaise and finely chopped basil
2 clove garlic, finely chopped
2 tbsp pine nuts
4 large rib celery
2/3 cup grated parmesan cheese
1 medium bunch any type lettuce

Season chicken with salt and pepper. Place skin side up in a medium baking dish. Bake at 375 for 35 minutes or chicken is cooked through. Let cool completely. Remove and discard skin and bones. Cut chicken into strips. Place chicken in a large bowl.

Dressing: Combine mayonnaise and next 3 ingredients in a food processor and puree. Add to chicken and mix well. Add celery and cheese; mix well. Season with additional salt and pepper. Serve over lettuce.
