2 cups diced cooked turkey breast
2 (16 oz) pkg frozen stir-fry vegetables
1 (1.5 oz) pkg taco seasoning mix
1 (49.5 oz) can chicken broth
1 (16 oz) jar salsa (the spicier the salsa, the hotter it’ll be.)
3/4 cup sour cream
1 cup crushed tortilla chips
In a large saucepan mix the turkey breast, vegetables, taco seasoning, chicken broth, and salsa. Bring to a boil and reduce the heat to low. Cover and simmer for 10 minutes. Put a 1-cup serving in each bowl and top with 1 tablespoon sour cream. Sprinkle 1 heaping tablespoon crushed tortilla chips on top of each serving of soup around the sour cream. Serve immediately. Serves 10 servings.
