SPICY SOUTHERN SHRIMP CREOLE

20 peeled and deveined shrimp (tail removed)
1/2 cup red bell pepper (diced)
1/2 cup green bell pepper (diced)
1/2 cup yellow onion (diced)
2 tbsp garlic (minced
2 tbsp vegetable oil
1 cup canned tomato sauce
1/4 cup canned diced tomato
1 tsp thyme (dry)
1 tbsp basil (dry)
pinch of cayenne pepper
1 tsp ground black pepper
1/4 tsp ground white pepper
1 tsp salt
2 tbsp paprika
4 cups cooked white or brown rice

Combine cayenne pepper, white pepper, black pepper, salt and paprika. Take half of the seasoning mixture and combine it with the cleaned shrimp. Work the seasonings into the shrimp, heat a large saute pan over a high flame for 3 minutes or until the pan is very hot. Add the vegetable oil.

Once the oil begins to smoke add the shrimp and saute for 3 to 4 minutes. Add all the vegetables including the garlic and continue to saute for an additional 3 to 4 minutes. Incorporate the tomato sauce, diced tomatoes, dry herbs and remaining seasoning mixture. Reduce the heat to a simmer and cook for another 3 or 4 minutes. Serve over rice.
