ITALIAN TOMATO RELISH

1 1/2 cups diced fresh roma tomatoes
1/4 cup diced red onion
2 tbsp fresh minced basil
1/2 tbsp fresh minced garlic
1 tbsp extra virgin olive oil
salt and pepper to taste

Combine all ingredients together and toss well in a bowl, let sit for at least 30 minutes before serving. Makes just over 1/2 cups salsa.

Note: This is excellent with fish and chicken.
