SAVORY SAUTEED APPLES

3 tablespoons unsalted butter
1 sprig thyme
4 large Granny Smith apples, peeled, cored, and sliced
1 tablespoon sugar, or to taste
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 tablespoon fresh lemon juice
Coarse salt and freshly ground black pepper
Melt the butter in a large heavy-bottomed saute pan over medium high heat. Add the thyme, apples and cook, stirring occasionally, for 5 minutes, or until softened.
Sprinkle with sugar, cinnamon and ginger and cook over medium heat, stirring occasionally, until tender, about 5 to 10 minutes. Add the lemon juice and stir to combine. Taste and adjust for seasoning with in salt and pepper. Serves 6 to 8
NOTES: These savory apples are equally at home for breakfast with oatmeal or as a side dish for roast pork or turkey. The key is to not overdo it with the sugar or the spices and let the natural sweetness of the apples be the star.
Rub cut apples with lemon juice to prevent them from turning brown or store them in a bowl of cold water with lemon. This recipe can easily be doubled or tripled for a crowd.
