OATMEAL CHOCOLATE TOFFEE COOKIES

1 1/2 cups flour
1 tsp baking soda
1 cup unsalted butter, room temperature
3/4 cup sugar and brown sugar
1 egg
1 tsp vanilla extract
1 1/2 cups oatmeal
1 cup dried cherries
1 cup bittersweet chocolate (4 1/2 oz), coarsely chopped
1 cup toffee pieces

Heat oven to 350. Sift together dry ingredients; set aside. Cream butter and sugars until light and fluffy, about 2-3 minutes. Scrape down sides of bowl during mixing. Continue mixing and add egg and vanilla. Then dry ingredients until well combined.

On low speed, add remaining ingredients until well combined. Divide dough into 3 equal portions; roll into logs using plastic wrap, approximately 1 1/2 inch in diameter.

Cut into slices and bake on parchment-lined baking sheets, until golden brown, 8-10 minutes. Remove from oven and transfer to cooling rack.
