NO-BAKE PEANUT BUTTER COCOA COOKIES

2 cups sugar
1/2 cup butter
1/2 cup milk
1/3 cup cocoa
2/3 cup peanut butter
3 cups quick-cooking oats pr 1 cup coconut
1/2 cup chopped peanuts, optional
2 tsp vanilla extract

Combine sugar, butter, milk and cocoa in medium saucepan. Cook over medium heat, stirring constantly, till mixture comes to rolling boil. Remove from heat and cool 1 minute. Add peanut butter and stir to blend. Add oats, peanuts and vanilla and stir to mix well. Quickly drop mixture by heaping tspfuls onto waxed paper or foil. Cool completely.

Variation: Leave out the peanut butter. Increase the oats to 4 cups, decrease vanilla to 1 tsp and add 1/8 tsp salt and 1 cup coconut.
