BRAISED SAUERKRAUT AND APPLES WITH BRATWURST AND POTATOES

1 (2-pound) package fresh sauerkraut, rinsed several times and excess water squeezed out
6 tablespoon bacon fat
1 medium onion, peeled and finely chopped
1-2 medium cloves garlic, peeled and minced
3 medium-sized tart apples, peeled, cored and diced
2 to 4 medium red potatoes, peeled and diced
3 bay leaves
2 tablespoons minced fresh savory, divided
1 tablespoon caraway leaves
1teaspoon dried thyme, crushed
1/2 teaspoon salt
Freshly ground black pepper to taste
1 cup apple cider or juice
1 (14 1/2-ounce) can low-sodium chicken broth
1 pound smoked bratwurst or other wurst of choice
1/2 cup heavy whipping cream

Preheat oven to 375. In a skillet, saute onion and garlic in bacon fat until onions are transparent. Add apples, potatoes and seasonings, stirring occasionally until apples begin to soften. Add sauerkraut and mix thoroughly. Stir in chicken stock.

Lightly grease a casserole dish and cover bottom with a layer of the sauerkraut mixture and then the sausage. Cover with remaining sauerkraut mixture and the pour cream over entire dish. Bake for 35 minutes or until liquid forms thick bubbles around edge of dish and sauerkraut begins to brown slightly on top. Serves 6-8
