SAUSAGE SKILLET

2 slices bacon, cooked and crumbled
3 medium red potatoes, thinly sliced
1 medium red or green bell pepper, cut into 1/2 inch strips
1 cup chopped onion
1/4 tsp salt
1/8 tsp each cayenne pepper and black pepper
1 lb cooked smoked andouille sausage or sausage links, cut into 1/2 inch slices
1 (10 oz) pkg frozen whole kernel corn
After the bacon has been cooked, in the same skillet with the drippings still in the pan, add the potatoes and cook over medium heat for 1bout 5 minutes. Add the pepper and onions. Sprinkle with the seasoings and cook, stirring mixture occasionally for about 8 minutes.
Add the sausage and corn and continue to cook, stirring occasionally for 8 to 10 more minutes or until the potatoes are tender and browned. Sprinkle with the reserved bacon and serve. Serves 6
