HERB COATING MIX FOR FRIED CHICKEN OR FISH

6 cups flour
2/3 cup fine stone-ground cornmeal
2 tablespoons parsley flakes
1 tablespoon each paprika, Old Bay Seafood seasoning, ground marjoram and ground thyme
2 teaspoons ground rosemary
1 teaspoon each black pepper, onion salt, garlic salt and ground sage

Whisk together ingredients and store in a dry place.

When making fried chicken, soak in mixture of 1/2 cup water, 1/2 cup milk and 1 beaten egg. Cover and refrigerate at least 1 hour. Drain the liquid from the chicken and coat with some of the coating mixture. Or for a quick coating, dip chicken in egg mixture and then in coating mixture twice. Fry as normal.

For fish: Coat with mixture and the fry.
