MARDI GRAS PORK AND POTATOES - Crock pot

8 carrots, peeled and cut into chunks
6 potatoes, peeled and halved
1 small onion, coarsely chopped
8 whole cloves garlic, peeled
1 (3-4 lb) pork loin
1 tsp salt and pepper
1/4 cup water
1/2 cup chicken broth and sherry
1/4 cup minced parsley
1 pkg dry onions soup mix
2 bay leaves

Season the pork with salt and pepper. Heat some oil into a skillet and brown meat until lightly browned on all sides.

Place the vegetables in order in crock pot and top with roast. Mix together the remaining ingredients and pour over the mixture over roast. Cook on LOW for 10 hours.
