CHOCOLATE FUDGE CAKE WITH BROILED FROSTING

2 cups cake flour
2 tsp baking powder
1/2 tsp salt
1 cup sugar
1/2 cup unsalted butter
3/4 cup milk
1 tsp vanilla extract
2 squares (1 oz each) unsweetened
chocolate, melted in 1/2 cup hot water
1 egg

Topping
6 tbsp melted butter
1/2 cup brown sugar
1/4 cup whipping cream
1/2 tsp vanilla
1 cup shredded coconut

Sift together the cake flour, baking powder, salt, and sugar. In mixing bowl, beat butter, milk, and vanilla; slowly beat in dry ingredients; beat for 2 minutes. Add chocolate and water mixture and egg; beat 2 minutes longer. Pour batter into greased and floured 9x13 inch baking pan; bake at 350 for 30 to 35 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

Mix topping ingredients; spread over cake and place under broiler. Broil for about 5 to 7 minutes, until topping is browned and bubbly.
