SPICY CAJUN POPCORN SHRIMP

2 lb. small shrimp, peeled and deveined
2 eggs
1 cup dry white wine
1/2 cup yellow cornmeal
1/2 cup flour
2 cloves garlic, minced
1/4 tsp. salt
1/4 tsp. cayenne pepper
1/4 tsp. black pepper
1/2 tsp. dried thyme
1 tbs. fresh parsley, chopped

In small bowl, whisk together the eggs and wine, and set aside. In a large bowl, combine the cornmeal, flour, garlic, thyme, parsley, salt, and pepper. Gradually add the egg mixture, and mix well. Cover the batter and let stand for 30 minutes, at room temperature. Dip the shrimp into the batter and coat well. Heat 2 to 3 inches of vegetable oil, in a large heavy skillet, or deep fry at 375 degrees. Fry in small batches for 2 to 3 minutes on each side, or until golden brown. Remove with a large slotted spoon and drain on paper towels. Serve with your favorite side dish and a salad.
