BEEF JERKY

4 lbs flank steak, partially frozen
1/2 onion, minced
1/4 tsp thyme
2 tbsp salt, pepper and whole cloves
4 clove garlic, minced
1/2 cup vinegar
1 cup red wine
1 cup Worcestershire sauce and soy sauce

Trim fan and gristle from steak and cut meat with grain into very thin slices. Combine remaining ingredients and pour marinade over steaks to cover and let stand in refrigerator about 15 hours. Squeeze marinade from strips by rolling meat with rolling pin. Place meat on baking sheets in a single layer and fry in the oven at 175 for 9 hours, turning once.
