BROWNIE BOTTOM BOURBON PIE

1 lb. prepared brownie mix

FILLING:

10 egg yolks
1 12/ c. sugar
2 env. plain gelatin
3/4 c. cold water
3/4 c. bourbon
4 c. heavy whipping cream, whipped
2 pinches salt
4 pinches sugar

Take your favorite brownie mix, mix enough to make 1 pound and put in the bottom of a 10 inch springform pan. Bake according to directions.

Beat the yolks until thick and lemon colored. Slowly beat in the 1 1/2 cups sugar. Soften gelatin in the water and add a third of the bourbon. Heat over boiling water until gelatin is dissolved. Add this to the yolks mixture and stir briskly. stir in remaining bourbon. Whip two cups of the cream and fold in. Pour filling into pan over cooled brownie and place in freeze for at least 4 hours.

Whip remaining cream with salt and sugar; spread over top of pie. Garnish with finely grated semi-sweet chocolate if desired.
