FETTUCCINE WITH CREAMY HAM SAUCE

1 12 oz can evaporated skim milk
2 teaspoons cornstarch
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup shredded Swiss cheese (1-1/2 ounces)
1 cup sliced fully cooked ham, cut into bite-size strips (about 5 oz.)
1 cup cooked broccoli or cauliflower cut into bite-size pieces (I used the broccoli, cauliflower and carrot mix)
1 2-1/2-ounce jar sliced mushrooms, drained
6 ounces fettuccine, cooked and drained (3 cups cooked)
2 tablespoons sliced green onions (optional)
In a medium saucepan stir together milk, cornstarch, mustard, salt, and pepper. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more.
Add cheese; stir until melted. Stir in ham, broccoli or cauliflower, and mushrooms. Cook and stir until heated through. Pour over hot pasta. If desired, garnish with sliced green onions. Serves 4
