GAMBERETTI PEPPERONI

12 oz medium shrimp
1/2 each red and green bell pepper, sliced
2 tbsp sun-dried tomato pesto
1 oz olive oil
2 tsp minced garlic
8 oz heavy whipping cream
Grated parmesan cheese
1 pkg orriechette pasta, cooked according to package directions and drained
While pasta is cooking, saute shrimp and peppers in oil; add garlic after shrimp is half way cooked. When the peppers are soft, add sun dried tomato pesto. Stir well and then add heavy cream. Let cream reduce. Add enough cheese to you liking (about 1/2 cup) to thicken the cream. Add the cooked pasta and mix together. Serves 2
NOTE: To make you own sun-dried tomato pesto, blend sun-dried tomatoes in a blender and add enough olive oil to desired consistency.
