STUFFING MUFFINS

1/4 lb smoked bacon, diced small
1/4 cup butter
1 large onion and 4 ribs celery , diced small
2 tbsp dried thyme
1 tsp kosher salt
Pepper
Muffins
4 cups flour
2 tbsp baking powder
2 tsp Old Bay seasoning
1 tsp salt and dried thyme
1/4 cup sugar
2 large eggs
2 cups milk
1/2 cup vegetable oil
Preheat oven to 400. Over medium heat, saute diced bacon in bacon until golden, about 3 minutes, stirring often. Add the next 5 ingredients. Reduce heat to low and cook, covered but stirring occasionally, until vegetables have softened, about 15 minutes. Remove from pan and allow to cool to room temperature. To make muffins. Mix dry ingredients together in a large bowl. Make a well in the center. In another bowl, add eggs and lightly beaten, then stir in the milk and oil. Pour into the well in the dry ingredients. Mix together quickly and gently until dough is just moistened. Gently fold in the sauteed ingredients and transfer into 2 greased muffin tins. Bake for 25 minutes or until golden. Makes 2 dozen.
