ESPRESSO BROWNIE BUTTONS

Nonstick vegetable cooking spray
1 box (18.3-ounce) fudge brownie mix
6 plus 1 teaspoon dry Café Vienna coffee drink mix, General Foods®
1 package (4-serving-size) instant butterscotch pudding and pie filling
2⁄3 cup vegetable oil
1⁄4 cup plus 1 tablespoon milk
2 eggs
1 cup powdered sugar, sifted
Additional Cafe Vienna coffee drink mix (optional)
Preheat oven to 350. Spray thirty-six 13⁄4-inch muffin cups with cooking spray.
In a large bowl, combine brownie mix, 6 tablespoons dry coffee drink mix, and the dry pudding mix. Add oil, 1⁄4 cup milk, and eggs, stirring with a wooden spoon until well mixed. Scoop 1 tablespoon of the mixture into each muffin cup. Bake in preheated oven for 16 to 20 minutes or until brownies begin to pull from the sides of the pan. Cool in pans on wire racks for 5 minutes. Carefully remove from muffin cups; cool on wire racks.
In a small bowl, stir together powdered sugar, the remaining 1 teaspoon coffee drink mix, and the remaining 1 tablespoon milk. Remove brownies from muffin cups; spoon about 1 teaspoon of the glaze over each. Sprinkle with additional dry coffee drink mix (optional).
