MOLASSES GLAZED VEGETABLES

11 oz small red potatoes, scrubbed
1/2 lb baby carrots
5 oz small onion, peeled
1 1/4 tsp unsalted butter
Salt, to taste
3 1/2 tbsp light molasses

Place first 3 ingredients in a steamer and steam for 15 minutes, covered. Drain and set aside.

In a skillet, melt butter and add molasses and salt. Bring to a boil and cook for 3 minutes or until thickened, stirring constantly. Add vegetables and stir to gently coat. Serve warm.
