SPICY-SWEET CHICKEN AND BROCCOLI STIR-FRY

1 lb boneless, skinless chicken breasts, cut into chunks
3 tbsp peanut or vegetable oil, divided
1 clove garlic, minced
1 thinly sliced onion
1 lb mushrooms
1 lb broccoli, cut into bite-size pieces
1/2 cup chicken broth, divided
1 tbsp corn starch
2 tbsp sesame seed, toasted
Marinade
1/4 cup packed brown sugar
3 tbsp soy sauce
1 tsp ground ginger
1/2 to 1 tsp crushed red pepper
In a bowl, combine marinade ingredients and add chicken, tossing to coat. Cover and refrigerate 15-20 minutes.
In a skillet, heat 2 tbsp oil until hot; stir-fry garlic, broccoli, onions and mushrooms for 2 minutes. Add 1/4 cup broth; cover and cook 1 minute or until crisp-tender. Remove from pan.
In same skillet, stir-fry chicken in remaining oil, 2-3 minutes or until no longer pink. Meanwhile, combine cornstarch and remaining broth, stirring to combine. Add mixture to broccoli in pan and cook until sauce is thickened and bubbly, stirring constantly. Sprinkle with sesame seeds before serving. Serves 4
