MEXICAN DINNER - Crock pot

2 lbs ground beef
1 medium onion, chopped
1 clove garlic, minced
Salt and pepper, to taste
1 can cream of mushroom soup
1 can Rotel tomatoes
1 can mild enchilada sauce
1/4 lb shredded sharp cheddar cheese, plus additional cheese sprinkled on to when done.

Brown meat with onion and garlic. Season with salt and pepper. Place in a crock pot; add remaining ingredients and cook on LOW 8-10 hours. When finished cooking, sprinkle with additional cheese, cover and allow to melt.
