SIRLOIN STEAK WITH MUSHROOM SAUCE

4 sirloin steaks
Salt and freshly ground pepper
Extra virgin olive oil

Mushroom Sauce:
1 ounce minced shallots
1 1/2 ounces unsalted butter
1 1/2 lbs white mushrooms
5 ounces dry white wine
20 ounces prepared brown beef gravy
Salt and freshly ground black pepper

Sweat the shallots in the butter over medium heat. Add the mushrooms, and continue to sauté until their juices have cooked away. Add the wine to deglaze the pan. Cook until the wine is reduced. Add the brown gravy and simmer 5 minutes more, or until the sauce has a good consistency and flavor. Season with salt and pepper to taste.

Season the steaks with salt and pepper and dip in the extra virgin olive oil. Allow any excess to drain away before placing on grill. Place the steaks presentation side down on the grill. Grill undisturbed for about 2 minutes. Turn the steaks over and complete cooking to the desired doneness about 2-4 minutes more. Top each steak with the mushroom sauce and serve at once.
