ESPRESSO BRANDY BALLS

3 1/2 cups fine animal cracker crumbs
1 cup finely ground pecans
1 cup sifted confectioners sugar, divided
3 tablespoons espresso powder
1/3 cup good brandy
1/3 cup light corn syrup
1/2 cup granulated sugar

Combine the cookie crumbs, pecans and confectioners sugar in a medium bowl. In a small bowl, dissolve the espresso powder in the brandy. Pour the coffee brandy mixture and the corn syrup into the cookie crumb mixture and stir until well blended.

Shape the batter into 1-inch balls and roll in the granulated sugar (confectioners sugar can be used too). Store in an airtight container.
