CHOCOLATE SQUARED COOKIES

8 ounces butter, softened
1-1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla extract
2 tsp espresso powder
1-1/2 cups plus 2 tbsp all purpose flour
1/2 cup plus 2 tbsp cocoa powder
1 tsp baking powder
3/4 tsp salt
1/2 cup chocolate chips
1/2 cup nuts (optional)
Preheat oven to 350 degrees F. Cut butter into small chunks and allow to soften on the counter.
In a medium bowl, combine flour, cocoa powder, salt and baking powder. Set aside.
In the bowl of an electric mixer, beat soft butter and sugars until light and smooth. Add vanilla and espresso powder. Add eggs one at a time, mixing well between each addition and beat until smooth. Add flour in a large spoonfuls, mixing well after each addition. Mix well. Add the chocolate chips and nuts and mix until just combined. Cover dough and refrigerate for at least an hour before baking.
Scoop dough using a small ice cream scoop or spoon onto cookie sheet. Bake for 10 minutes or until edges are slightly crisp. Center should be a bit gooey.
