CAJUN GARLIC PORK ROAST

1 tsp seasoned salt
1 tbsp oregano leaves, crushed
1 tbsp black pepper
1 1/2 tbsp minced garlic
1/2 tsp red pepper flakes
1 tsp each chili powder and ground cumin
3-4 lbs boneless pork loin roast

Heat oven to 350. Blend seasoning and rube over surface of roast. Place in a shallow roasting pan and insert thermometer. Bake to thermometer registers about 155 to 160 degrees, about 60 to 90 minutes. Remove from oven; let rest 10 minutes before slicing.
