CARAMELIZED ONION MASHED POTATOES

2  teaspoons  olive oil
1 1/2  cups  prechopped onion
1 1/2  pounds  chopped peeled baking potatoes
1/2  cup  fat-free buttermilk
2  tablespoons  butter
1/4  teaspoon  salt
1/4  teaspoon  black pepper
In a large skillet, heat olive oil over medium-high heat. Add onion and sauté for 15 minutes or until the onions are golden brown.
Meanwhile, put potatoes in a saucepan filled with cold water and bring to a boil. Cover, reduce heat, and simmer 15 minutes or until tender. Drain. Add buttermilk, butter, salt, and black pepper. Mash with a potato masher. Stir in onion.
