SMOKY PAN-GRILLED PORK CHOPS

1 tablespoon cumin seeds
1 tablespoon brown sugar
1/2 teaspoon hot smoked paprika
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 (4-ounce) boneless center-cut pork chops
Cooking spray
Toast the cumin seeds in a small skillet over medium heat for about a minute or until fragrant, stirring frequently. Put the cumin seeds in a grinder or blender and process until ground. Then combine the ground cumin, brown sugar, hot smoked paprika, salt, and pepper. Rub the mixture evenly over the pork.
Heat a grill pan over medium-high heat and coat the pan with cooking spray. Add pork chops to the pan. Cook 5 minutes on each side or until done.
