SALMON IN MAHOGANY SUACE

2 lbs salmon filets, about 1 inch thick

Sauce
1 can whole-berry cranberry sauce
1/4 cup each honey and soy sauce
2 clove garlic, minced
1/4 tsp pepper
Chopped parsley, garnish

Preheat oven to 375. Remove and discard skin and any bones from fish and place in a lightly greased 13x9 inch baking pan.

Stir together sauce ingredients and pour half over salmon, spreading to coat. Reserve remaining sauce. Bake, uncovered, for 20-25 minutes or until fish flakes easily with a fork.

Cook remaining sauce in a pan until heated through. Serve with salmon and sprinkle with parsley. Serves 4
