REUBEN CASSEROLE

1 (32-ounce) jar sauerkraut, well drained
2 medium tomatoes, thinly sliced
2 tablespoons Thousand Island dressing
1-2 tablespoons butter
3-4 cups shredded corned beef
2 cups shredded Swiss cheese
1 (10 ounce) can refrigerated flaky buttermilk biscuits
2 rye crackers, crushed
1/4 teaspoon caraway seeds, optional

Spread sauerkraut in a 9 x 13 baking dish. Arrange tomato slices on top; spread with dressing and dot with butter. Cover with corned beef and sprinkle with cheese. Separate each biscuit into 3 layers and arrange over casserole. Sprinkle with crushed cracker crumbs and caraway seeds, if desired. Bake at 425 for 10-15 minutes, or until the biscuits are golden.
