SHRIMP FETA CASSEROLE

2 large eggs
1 cup evaporated milk
1 cup plain yogurt
1/2 teaspoon fresh ground black pepper (can use more)
3 ounces feta cheese, finely crumbled
1/3 pound shredded Swiss cheese
1/3 cup chopped fresh parsley
1 teaspoon dried basil
1 teaspoon dried oregano
4 garlic cloves, minced
1/2 pound dry angel hair pasta, cooked to al dente
1 (16 ounce) can mild chunky salsa
1 pound uncooked medium shrimp, peeled and deveined
1/2 pound mozzarella cheese, shredded
Preheat oven to 350 degrees F. Butter a 8 x 12-inch baking dish.
In a bowl whisk the eggs with evaporated milk, yogurt and black pepper until smooth and well combined. Mix in the feta, Swiss cheese, parsley, basil, oregano and garlic. Spread half the cooked pasta over bottom of baking dish. Cover with salsa, then half the shrimp. Spread remaining pasta over shrimp.
Pour and spread egg mixture over pasta. Add remaining half of shrimp, then top with mozzarella cheese. Bake uncovered for 30 minutes. Remove from oven, and let stand 20 minutes before serving.
