MINIATURE BRIE AND CRANBERRY PASTRIES

1/2 (17.25-ounce) package frozen puff pastry, thawed
1 egg, beaten
1 tbsp water
6 ounces Brie
1/2 cup dried cranberries, finely chopped
Preheat oven to 400. Line baking sheet with parchment paper.
Using a lightly floured rolling pin, roll pastry on lightly floured surface into a 14 x 12-inch rectangle. Cut pastry into rounds using a floured 2-inch cookie cutter.
In small bowl, add water to beaten egg. Lightly brush tops of pastry with egg wash. Bake 10 to 15 minutes, or until golden. While pastries are still warm, slice in half and, using spatula, lightly press down on each half to prevent doming.
Remove rind from Brie. In small bowl, combine Brie and chopped dried cranberries; mix well. Spoon 1/2 tsp of cheese mixture inside each pastry. Bake on parchment-lined baking sheet 2 to 3 minutes, or until cheese begins to melt. Serve immediately.
Notes
Puff pastry can be baked and separated 24 hours in advance, cooled, and stored in airtight container at room temperature.
