SAUTEED ASPARAGUS I

Category: Asparagus

30 stalks asparagus
3 cups sliced mushrooms
3 tbsp butter
Salt and pepper

In a large pot, bring just enough water to cover the asparagus stalks, to a boil. Add the asparagus to the pot and cook for approximately 1 minute, just long enough to blanch the vegetables. Drain and set aside.

In a saute pan, cook the sliced mushrooms in butter and season them with salt and pepper, to taste. Add the asparagus to the pan and saute until tender. Serves 6
