CANDIED LEMON RIBBONS - Garnish

2 lemons
3/4 cup sugar, divided
1/2 cup water

Using a channel knife, remove top layer of lemon peel in thin ribbons. In a small saucepan, bring 1/2 cup sugar and water to boil. Add ribbons. Remove from heat and cover pan with plastic wrap. Steep for 20 minutes. Remove plastic wrap. strain, and lay ribbons on parchment paper to dry for 2 hours. Lightly toss ribbons with remaining 1/4 cup sugar to coat. Allow to dry for 1 hour. Store in an airtight container.
