HEAVENLY CHICKEN

1/4 cup soy sauce and apple juice
2 tbsp oil and lemon juice
1 tbsp honey
1/4 tsp ground ginger
1 clove garlic, finely chopped
6 boneless, skinless chicken breasts
1/2 tsp ginger
6 thin slices havarti or jack cheese

Mix first 7 ingredients together in a resealable bag. Add chicken, coat and marinade for at least 1 hour. Remove chicken and reserve marinade. Cover and grill chicken, brushing with marinade, 15-20 minutes, turning often. When done, sprinkle ginger and top with cheese. Serve when cheese melts.
