MUNCHY CHEDDAR BACON BITES

4 cups all-purpose flour
5 tsp baking powder
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp dry mustard
10 tbsp (1 1/4 sticks) cold unsalted butter
1 1/2 cups finely shredded cheddar cheese (6 ounces)
1 3/4 cups milk
6 bacon slices, cooked until crisp

Preheat the oven to 400.

In a large bowl, sift together the flour, baking powder, salt, pepper, and mustard. Cut in the cold butter with a pastry blender (or, if you don’t have one, use two knives). Keep working with the butter until the mixture is crumbly. Add the cheese to the bowl, and stir until the cheese is combined with the other ingredients. Add the milk and stir with a spoon until it is completely mixed into the dough.

Crumble the bacon and add it to the dough. Using a spoon, mix the bacon into the dough.

Form the dough into small rounds using a spoon or your hands, then place the rounds on one of the baking sheets. Place the baking sheets in the oven and bake for 10 minutes. If you had the sheets on different racks in the oven, carefully switch the position of the sheets. Bake for 10 more minutes, until the bites are golden brown and a toothpick comes out clean when inserted into one of the bites. Serve warm.
