MARGARITA MARINADE for Steaks

2 cloves garlic, crushed and chopped
1 medium onion, chopped
2 T. cilantro, chopped
2 T. olive oil
Salt and pepper, to taste
Juice of one lime
1 c. margarita mix
2 oz. tequila, a good one.

Add garlic, onion and cilantro to container large enough to also hold meat to be marinated. Add oil, salt and pepper. Add lime juice, margarita mix and tequila.

Add meat and mix so that meat is thoroughly coated. (skirt steak with the excess fat removed is really good.) Refrigerate for at least 1 hour before grilling. For best results, let marinate overnight.
