CHICKEN AND MUSHROOM ADOBO

3 lbs cut up chicken
20 mushrooms
1/4 cup each soy sauce and wine vinegar
3 heads garlic, minced
2 bay leaves
1/2 tbsp peppercorns, crushed
1/2 cup olive oil
2 tbsp chili pepper

Bring all ingredients to a boil and simmer about 30 minutes, stirring often or until liquid has evaporated. Serve with cooked rice.
