CRANBERRY CHEESECAKE MUFFINS

3 oz cream cheese, softened
1/4 cup sugar, divided
1 cup milk
1/3 cup oil
1 egg
1 (15.6 oz) pkg cranberry quick bread mix

Preheat oven to 400. Grease muffin pan.

Beat cream cheese and 2 tbsp sugar until blended. Combined milk, oil and egg in a large bowl and beat with a fork until blended. Stir in quick bread mix just until moistened.

Fill muffin pan 1/4 full with batter and drop 1 tsp cheese mixture into center of each cup. Spoon remaining batter over cream cheese to cover. Sprinkle with reserved sugar. Bake 17 to 22 minutes or until golden brown. Cook 5 minutes in pan before removed to a wire rack to cool completely.
