CAJUN PORK ROAST

2 lbs boneless pork loin roast, rubbed with cooking oil

Rub
3 tbsp paprika
1/2 tsp each cayenne, salt, ground white pepper and cumin
1 tbsp garlic powder
2 tsp each oregano and thyme
1/4 tsp nutmeg

Combine rub ingredients and rub well over surface of roast. Place in a shallow pan and roast at 350 for about 1 hour or until internal temperature is 155 degrees. Remove from oven and let rest 5-10 minutes before slicing.
