SPINACH RICE CASSEROLE

1/2 cup raw rice, cooked according to package directions
1/2 lb butter
1/3 cup flour
1 quart milk
3 eggs, beaten
2 lbs spinach, cooked and chopped
1/4 cup chopped green onions
1 1/2 cups crumbled feta cheese
1/2 cup grated parmesan cheese, divided
1 tbsp paprika
Salt and pepper, to taste

While rice is cooking, melt the butter in a saucepan and add flour, stirring until thoroughly mixed together. Cook about 2 minutes and allow to cool slightly. Whisk mixture to simmering milk a small amount at a time. Add a small amount of hot liquid to beaten eggs and whisk back into the flour mixture until smooth and creamy. Let simmer 10-15 minutes.

Place spinach in the bottom of a 13x9 inch baking pan. Layer with rice, feta, parmesan and green onions. Season with salt and pepper. Pour sauce over top and sprinkle with additional parmesan cheese and paprika. Bake at 350 for 20-25 minutes.
