MEXICAN CASSEROLE

2 lbs ground beef
1 large onion, diced
1 clove garlic, minced
1 tbsp each red chili powder and ground cumin
Salt and pepper, to taste
1/4 cup minced cilantro
1 (10 oz) can tomatoes with chilies
1 cup water
1 (15 oz) can refried beans
2 (2 1/4 oz) can sliced ripe olives
1 (8 oz) can diced green chilies
1/4 lb each grated jack cheese and cheddar cheese, mixed together
2 cups crushed tortilla chips
Brown meat with onions and garlic. Add chilies and seasonings. Add tomatoes and water. Remove from heat.
Layering in thirds in a casserole dish, start with crushed chips, beans, ground beef mixture, olives and cheese. Repeat layers, ending with cheese. Bake, uncovered, at 374 for 45 minutes.
