BAVARIAN POT ROAST (Crock Pot)

3-4 lb beef arm pot roast
1 tsp vegetable oil
1 1/2 tsp salt
1/8 tsp pepper
1/2 tsp ground ginger
3 whole cloves
4 medium apples, cored and quartered, leave skin on
4 carrots, sliced
1 small onion, sliced
2 stalks celery, sliced
1/2 cup apple juice, red wine or beef broth
1/3 cup German-style mustard
1/2 tsp black pepper
2 bay leaves
3-4 tbsp flour and water or red wine
Wipe roast well and trim off all excess fat. Lightly rub top of meat with oil. Dust with salt, pepper and ginger. Insert cloves in meat. Place carrots, apples, onions and celery in crock pot. Place meat on top of vegetables. Pour in the apple juice, mustard and spices. Cover and cook on low for 8-12 hours.
Remove the roast and apples to a warm platter when fully cooked. Turn the crock pot to high. Transfer meat and vegetables to a serving platter.
For gravy, make a smooth paste with the flour and water; stir the paste into the crock pot. Cover and cook until thickened. Pour gravy over roast when serving. Serves 6-8
